Describing food as ‘genetically modified’ was originally as a euphemism for the phrase ‘genetically engineered’, as marketers found that people thought the word ‘engineered’ was too mad-scientist scary. Even better to shorten ‘genetically modified’ to GM, so the word ‘genetically’ doesn’t appear at all — and perhaps there are even subconscious positive associations with General Motors.
